Good Morning

Hoisin Chick and Snow Peas
Serves 4
 
1 ¼ cups water
1 cup uncooked quick – cooking brown rice
2 tsp grated peeled gingerroot
½ tsp ground turmeric
¼ cup all fruit apricot spread
3 tbs hoisin sauce
1 tbs cider vinegar
1/8 tsp crushed red pepper
Cooking spray
1 pound boneless, skinless chick breasts
2 tsp canola oil
2 medium onions, cut into strips
6 oz. snow peas
1 tsp salt
 
In a medium saucepan, bring water to a boil over high heat. Stir in the rice, ginger, turmeric. Reduce the heat and simmer, covered, for 10 minutes or until the liquid is absorbed. Remove the pan from the heat. Let stand, covered, to retain the heat.
Meanwhile, in a small bowl, whisk together the fruit spread, hoisin sauce, vinegar and the red pepper flakes. Set aside.
Lightly spray a large skillet with cooking spray. Cook the chicken over medium-high heat for 2 minutes, or until barely pink in the center, stirring frequently. (Using two utensils makes handling easier.) Transfer the chicken to a large plate. Set aside.
In the same skillet, heat the oil, swirling to coat the bottom. Cook the onions for 3 minutes, or until beginning to brown, stirring frequently.
Stir in the snow peas. Cook for 1 – w minutes, or until just tender-crisp, stirring frequently. Stir in salt.
Spoon the rice in the center of a serving platter. Arrange the vegetable mixture around the rice.
Return the chicken with any accumulated juices to the skillet. Stir in the fruit spread mixture. Cook, still over medium-high heat, for 1 minute, or until the fruit spread mixture is glazed and the chicken is no longer pink in the center, stirring constantly. Spoon the chicken mixture over the rice. Let stand three minutes so the flavors blend.
